Hillary’s BBQ Chicken and Grape Salad

When I was little I hated chicken and grape casserole, but I love this light summer dish!

1 t onion powder
1 t paprika
1 t chili powder
¾ t salt (divided)
1 lb skinless chicken breast (cooked)
1 1/2 c seedless purple grapes
2/3 c celery (chopped)
½ c chopped red onion
¼ c low fat mayo
1 T+ red wine vinegar
1 T orange juice
¼ c chopped walnuts (toasted or candied)


Cook chicken breast. Then shred it or cut into small pieces. Then mix all spices, OJ, vinegar, and mayo in a medium bowl. Add celery, onion, cut chicken, walnuts, and grapes. Mix well and enjoy!
